You do not have to be vegan or consider yourself a “plant-based diet” type person to fall in love with these reinterpretations of 125 of America’s favorite foods, and no animals were harmed in the making of these mouth watering recipes!

Frank graciously offered to make me “anything I want” for my birthday dinner, and I told him that even though none of our family or friends who were coming to celebrate were vegan, if I was honest about what I really wanted, it was to make something from Chloe’s Kitchen Cookbook that had no meat or dairy, but that would be a crowd-pleaser for our guests.

I wasn’t covertly looking to convert them, however, I could have picked any recipe from this book and won them over! Admittedly, I did secretly hope that I could prove that eating healthy can be insanely delicious with no feeling of sacrifice whatsoever!

 

I’m delighted to report that my 13 year-old son, my Five Guys-frequenting husband, my Italian in-laws, and my cheese curd, burger-eating friend from Minnesota, all went bananas for her “Grilled Pesto Pizza with Sweet Potatoes, Kale, & Balsamic Reduction.  Since Frank and I love arugula and had it on hand, we substituted it for the kale, but suffice to say, it was a major hit, and “we’re” (for those of you who don’t know, that usually means Frank :-)) making her Double Double Drive Thru Burgers, Sea Salt and Vinegar French Fries, Sweet Potato Gnocchi with Sage Butter, and Best-Ever Baked Macaroni & Cheese next! I’m actually inspired to cook when I go through her cookbook – there’s hope for me yet!

Oh, and did I mention, Chef Chloe was the first-ever vegan chef to win Food Network’s hit show Cupcake Wars?  She includes an entire section of to-die-for desserts that will leave you scratching your head trying to decide which one to make first!
